Ingredients:

For the Buffalo Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup buffalo sauce (Frank’s RedHot Buffalo Wing Sauce works great!)

For the Cobb Salad:

  • 6 cups chopped romaine lettuce (or mixed greens)
  • 6 slices cooked bacon, crumbled
  • 2 hard-boiled eggs, peeled and chopped
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely diced red onion
  • 1/2 cup crumbled blue cheese

For the Creamy Blue Cheese Dressing:

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1/4 cup crumbled blue cheese
  • 2 tbsp milk or buttermilk (add more for thinner consistency)
  • 1 tbsp white vinegar or lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and black pepper to taste

Instructions:

  1. Prepare the Buffalo Chicken: * Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. * Pat the chicken breasts dry. Drizzle with olive oil, sprinkle with salt and pepper. * Bake for 18-22 minutes, or until an internal temperature of 165°F (74°C) is reached. (Alternatively, you can air fry at 375°F for 12-15 minutes). * Once cooked, remove from oven and let rest for 5 minutes. Shred or dice the chicken into bite-sized pieces. * In a medium bowl, toss the cooked chicken with the buffalo sauce until well coated. Set aside.
  2. Make the Creamy Blue Cheese Dressing: * In a small bowl, combine mayonnaise (or Greek yogurt), crumbled blue cheese, milk, white vinegar (or lemon juice), garlic powder, and onion powder. * Whisk until smooth, breaking up any large blue cheese chunks. * Taste and season with salt and pepper as needed. Add more milk if you prefer a thinner consistency. Set aside.
  3. Assemble the Cobb Salad: * Arrange the chopped romaine lettuce evenly across a large platter or in individual bowls. * Artfully arrange rows of the crumbled bacon, chopped hard-boiled eggs, diced avocado, halved cherry tomatoes, and diced red onion over the lettuce. * Pile the buffalo chicken in the center or along one row. * Sprinkle the entire salad generously with the crumbled blue cheese.
  4. Serve and Enjoy: * Drizzle the creamy blue cheese dressing generously over the salad just before serving. * Serve immediately and prepare for rave reviews!

Enhance Your Salad

Tips & Variations:

  • Make Ahead: Cook the chicken and bacon, hard-boil the eggs, and make the dressing a day or two in advance. Store components separately in the fridge. Assemble just before serving for the freshest taste.
  • Grill It: For extra flavor, grill the chicken instead of baking!
  • Other Greens: Feel free to use spring mix, spinach, or even kale as your base.
  • Spice It Up (or Down): Adjust the amount of buffalo sauce on the chicken to your preference. For extra heat, add a pinch of cayenne to the dressing. For less heat, use a milder buffalo sauce.
  • Blue Cheese Alternative: Not a fan of blue cheese? A creamy ranch dressing or even a simple vinaigrette would also be delicious, though you’d lose some of that classic Cobb tang.
  • Additions: Consider adding some corn, black beans, or even some tortilla strips for extra crunch
